QARTVALLEY Saperavi Qvevri
Technology: Qvevri is an ancient clay vessel, in which the world’s first wine was created 8000 years ago (territory of modern Georgia). Wine is produced from Saperavi grapes harvested in the Kvareli region, in Qvevri, according to the traditional Georgian method. Wine is derived from the alcoholic fermentation of a must with prolonged contact with grape pomace, including skins, pulps, and seeds, for 6 months in Qvevri.
Tasting notes: Pleasant, rich, and pure aromas of red berries, blackcurrant, cacao nib, wood polish, and beeswax come through on the nose. Silky, well-structured tannins, medium body, and medium to long aftertaste where subtle cigar box flavors come through, enhancing the wines complexity.
Serving suggestion: pairs with boar meat, mountain goat and roasted wild birds. Saperavi Qvevri also pairs with roasted lamb and pork skewers, hard cheeses, ragout and oyster mushrooms.
